Leftover Mashed Potato Knishes

Leftover mashed potatoes have never met a better fate. A few eggs, a bit of flour, and a quick fry turn yesterday's side dish into golden, crispy knishes.

Ingredients

  • About 24 ounces leftover mashed potatoes
  • 3 eggs
  • About 1 cup flour, plus more for coating
  • Garlic salt and pepper
  • Oil for deep frying

Instructions

  1. Add three eggs and about a cup of flour to roughly 24 ounces of leftover mashed potatoes. Mix in a food processor with some garlic salt and pepper, or do the same with just a fork in a bowl.
  2. Drop the potato mixture into flour and roll it around until it is coated.
  3. Deep fry until golden and crispy.
