Matzo Ball Soup

Nothing says Passover like matzo ball soup. This is the ultimate comfort food for your seder table: golden broth, fluffy matzo balls, and the aroma that makes everyone drift toward the kitchen.

Ingredients
- Chicken
- Onions
- Carrots
- Zucchini
- Parsnip
- Fresh dill
- Salt, pepper, and garlic powder
- Water
- Matzo ball mix (be sure it's kosher for Passover)
Instructions
- Place the chicken and onions, peels on, in a large pot with water and bring to a simmer.
- Skim the surface until clear, removing any foam or impurities.
- Add all the vegetables: carrots, zucchini, parsnip, and fresh dill.
- Season with salt, pepper, garlic powder, a little sugar, and any other spices you like.
- Let simmer on low heat for several hours. Ideally overnight: start around 9 or 10 pm and let it cook through the morning.
- Prepare the matzo balls according to the package directions.
- Add the matzo balls to the soup and serve.
- Note: when making this for Passover, be sure every ingredient is marked kosher for Passover.
