Shepherd's Pie Surprise

This week's Leftover Makeover turns whatever the fridge is holding into a bubbling shepherd's pie with a golden mashed potato crown. Hearty, forgiving, and endlessly adaptable.

Ingredients
- 4 to 6 leftover hamburgers or meatballs
- 24 oz chicken soup
- 24 oz container of mashed potatoes
- Frozen peas and carrots
- 2 tablespoons tomato paste
- Garlic salt and pepper
- Trader Joe's Everything But the Leftovers seasoning (or thyme, rosemary, and parsley)
- Flour
- Paprika
Instructions
- Preheat the oven to 425°F.
- Pulse the burgers in a food processor (or chop) until they resemble ground beef.
- Heat a pan and mix the tomato paste with 8 oz of the chicken stock.
- Add the chopped meat, vegetables, and remaining stock.
- Season and heat until bubbling.
- Thicken with flour.
- Warm the mashed potatoes for easy spreading.
- Fill a pie dish with the meat mixture and top with the potatoes.
- Season the top and spray with cooking spray.
- Bake until golden, about 20 minutes, or broil for a quick finish.
- Tip: freeze leftover burgers, soup, and mashed potatoes separately until you have enough to make this dish.
