Smoked Beef Jerky

The carnivore's candy. A simple marinade and low, slow smoke turn beef into chewy, savory jerky that costs a fraction of the store-bought kind and tastes twice as good.

Ingredients

  • London broil
  • 2 tablespoons brown sugar
  • 1 tablespoon red pepper flakes
  • 1 tablespoon ground pepper
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup soy sauce
  • 1/4 cup Worcestershire sauce
  • 1/4 cup raw honey
  • 1/4 cup water
  • 1/2 cup Dr. Pepper

Instructions

  1. Cut the London broil into thin slices, trimming off the fat. Partially freezing the meat makes it easier to cut.
  2. Marinate overnight.
  3. Set the smoker to its lowest temperature (165°F works well).
  4. Place the jerky on a wire rack and set the whole rack on the smoker rack.
  5. Smoke for about 1 1/2 to 2 hours.
  6. Oven option: add a touch of liquid smoke for that smoky flavor.

Warning: homemade jerky creates jerky expectations.
