The Ultimate Stuffing Makeover

Who is ready for the ultimate stuffing recipe? Leftover stuffing gets a second act with crisp edges and a rich center that makes it the first thing to disappear from the table, again.

Ingredients
- 6 cups bread (I used leftover challah & sourdough bread and pretzel challah from Shabbat), cubed and dried (either leave out for a few days or put in oven at 200°F for 25 minutes)
- 24 oz chicken soup (or vegetable stock for a vegan version)
- 2 eggs (or flaxseed egg for vegan option )
- 2 sticks of margarine (keeping it kosher!)
- 1 medium onion, thinly sliced
- 2 celery stalks, thinly sliced
- 2 carrots, thinly sliced
- Salt & pepper, garlic salt to taste and some fresh garlic
- 1 tbsp Trader Joe’s Everything But the Leftovers seasoning (or 1 tsp each dried parsley, sage, rosemary, and thyme—because yes, we’re going full Simon & Garfunkel here )
- Fresh herbs (sage, rosemary, thyme)
- Optional Add-In: If you’re roasting a turkey, mix some turkey drippings with chicken stock, reduce it on the stove, and use it to replace some of the soup. Flavor game = next level.
Instructions
- Prep the Veggies: In a sauce pan, melt the margarine. Add the fresh sage, rosemary, and thyme, and let them boil gently for about 5 minutes to infuse the margarine. Set aside some for greasing your baking dish and pour the rest into a large frying pan
- Add the onions to the pan and sauté until just starting to brown (hello, caramelized magic ). Toss in the celery and carrots and cook until tender. Sprinkle with salt, pepper, and Seasoning (tj or dried herbs.)
- Combine: In a large mixing bowl, toss the bread cubes with the cooked veggies, eggs, chicken soup (or veggie stock), and any optional turkey dripping reduction. Mix until well-coated.
- Bake: Grease your baking dish with the reserved herby margarine. Spread the stuffing mixture evenly in the dish, cover, and bake at 350°F for 40 minutes. Then uncover and bake for an additional 20 minutes until the top is golden and slightly crispy.
Stuffing round two, better than round one.
